About Our Dairy

Our Jersey cows live outdoors, playing in the sunshine and frolicking in the snow. They enjoy grazing all summer long and munching homegrown hay through the winter. We supplement their diets with a blend of ground whole grains. Our deliciously sweet and creamy milk is gently vat pasteurized at a low temperature and then bottled or made into cheese in our on-farm licensed creamery.

Is your milk raw?

No. Our milk is gently vat pasteurized at a low temperature. In Nebraska, it is not legal to sell raw milk unless the end consumer comes to the farm and buys the milk directly from the farmer.

What is vat pasteurization?

There are three basic types of pasteurization: Low Temperature, Long Time (LTLT, or vat pasteurization), High Temperature, Short Time (HTST), or ultra-pasteurization (extremely high temperature). During the vat pasteurization process, we heat the milk to 145F, hold that temperature for 30 minutes, and then quickly cool the milk back to refrigerator temperature. Our milk is minimally processed and retains all of its delicious flavor with the additional safety and peace of mind that comes with pasteurization.
