Favorite Sourdough Recipes

We’ve had a sourdough starter going for a few years (her name is Cordelia), and we love baking with her! Here are a few of our favorite recipes:


Recipes adapted from Cultures For Health

Long Fermented Whole Wheat Sourdough Tortillas
2 c whole wheat flour (or 1 c wheat, 1 c rye)
1 c milk
1 c sourdough starter
8T (scant) lard
2 t salt

Mix these thoroughly with electric mixer, and then work in 2 c white flour with dough hook.
Once you have a nice ball of dough, cover it and let it sit for at least 8 hours to ferment.
Heat well seasoned cast iron skillet to medium high heat.  While it is heating begin rolling tortilla dough into circles.  Cook for about 30 seconds, or until bubble begin to form and the edges firm up.  Flip and finish cooking another 30 seconds.

Serve hot or cool and store.
Makes about 16 tortillas

We like to use these for a melt type sandwich.  After the tortillas are cooked add meat and cheese to one side, fold the other side over and return to the skillet until the cheese is melted. Some favorite toppings are: pizza sauce, ground beef & mozzarella cheese; ham & swiss cheese, salsa, taco meat & cheddar cheese; roast beef, sauerkraut & cheese

Sourdough Pie Crust
1 c flour
½ t salt
8 T lard
½ c sourdough starter

Mix above ingredients in an electric mixer.  Cover and let ferment for at least 7 hours (I’ve used it in much less time)  Roll and use as you would for a pie.

Makes enough for a top and bottom crust.

Rye Sourdough English Muffins

We usually use this recipe with whole wheat flour and the same whole wheat sourdough starter we use for everything else.



We’ve also adapted our old biscuit and cornbread recipes to use sourdough.

1 c flour
1 c cornmeal
3t baking powder
1 t baking soda
¾ t salt
¾ c sourdough starter
¾ c milk
I combine this much and let it sit to ferment and then just before baking I add:
2 eggs
¼ c oil

Bake in greased 9×9 pan at 425° for 20-25 min.

1 c whole wheat flour
1 c. white flour
2 t baking powder
1 t baking soda
½ t salt
Blend and then cut in 1/3 c butter
Add ¾ c sourdough starter and ¾ c milk

Let sit for an hour or more before dropping by spoonfuls onto baking sheet.  Bake at 450° for 10-12 min.
